Crispy Fluffy Fried Milk Recipe

Fried milk? Sounds weird but tastes amazing. This popular Taiwanese snack went viral on YouTube months ago and definitely make people addicted for its crunchy crispy skin and creamy soft fillings. As reported from IDNTimes, you can try this simple recipe at home.
 
Ingredients:
 
Filling dough:
300 grams UHT milk
60 grams corn starch
50 grams sugar
60 grams water
1 tsp vanilla extract
Refined sugar to taste
Cinnamon powder to taste
 
Skin dough:
80 grams all-purpose flour
20 grams corn starch
½ tsp baking powder
1tsp sugar
1tbsp oil
110 ml cold water
 
Steps:
1. Prepare a bowl, mix corn starch with water, add a little at a time until dough looks lumpy but no longer crumbly.
2. Prepare a non-sticky pan, cook milk and sugar with little water over low heat.
3. Add mixture corn starch and water, stir well over low heat until get sticky but not stiff. Turn off the heat, add vanilla extract, stir.
4. Put the dough in a bowl or container, cover with plastic wrap or cloth, store in refrigerator for two hours (until dough harden).
5. Mix flour, baking powder, and sugar in a bowl for skin dough (wet dough). Add water a little at a time, stir well. Add oil, stir again, and set aside.
6. Prepare a cutting board covered with plastic wrap and sprinkled with little corn starch.
7. Remove the dough, place on cutting board, and cut into one-bite cubes.
8. Coat those cubes with corn starch before dipping into wet dough.
9. Heat the oil (medium heat), fry all dough until golden brown, and repeat until dough runs out.
10. Served with sprinkle of refined sugar and cinnamon powder. Taste way better with cup hot unsweetened coffee or tea.
