As a Jakartan, you may already be familiar with gultik or gulai tikungan in Blok M area, South Jakarta. If you are interested in making it yourself at home, then this could be good news for you. The reason is, how to make it is not that difficult. Here's how to cook Gultik Blok M based on a recipe from the Chef of Ibis Styles Jakarta Tanah Abang, Yoggi Sanjaya, quoted from Kompas.com.
120 grams of beef
50 grams of chicken liver gizzard
20 grams of tomatoes
5 grams of green onions
5 grams of celery leaves
2 grams of fried onions
30 grams of liquid coconut milk
10 cloves of red onion
10 cloves of garlic
6 red chilies
½ galangal stem
2 pieces of lime leaves
1 bay leaf
How to make gultik:
Prepare the ground spices and seasonings separately. Crush the seasoning, then cut the beef and chicken liver into cubes. Boil the beef until tender. Add salt and pepper to taste.
In a separate container coat the liver gizzard with yellow spices, then add salt and pepper to taste, set aside.
Puree the ground spices, then heat the pan and add enough oil.
After that, saute ground spices and seasonings until fragrant over low heat so that the aroma and flavor are getting out, and not burning.
If the aroma of ground spices and seasonings has been smelled, add the stew of meat, stir until smooth and the aroma comes out. When it smells good, add 100 ml of water, stir until all the ingredients are mixed. Wait for the meat to boil and cook. When it's boiling, add the liquid coconut milk. It can be grated coconut or instant coconut milk.
While waiting for the gultik to cook, you can make fried liver gizzard satay. Stick the liver gizzard and coat with egg. Then, fry the satay until dry.
When the gultik is boiling, add the liquid coconut milk and keep stirring so that the coconut milk doesn't break.
Put the tomatoes, leeks, and celery leaves. Cook until it boils again until the aroma comes out.
Gultik is ready to be served. To make it more delicious, put the rice on a plate, pour the curry, add fried onions and onion crackers.
