Maybe you've heard of this type of bread. Japanese milk bread is Japanese torn bread with very soft texture, fluffy shape, and milky taste. In their home country, this bread is known as Hokkaido milk bread.
Japanese milk bread has recently been viral in countries in Asia, including Indonesia. Especially after many people have tried to create Japanese Milk Bread with cute pastel colors.
For those of you who are interested in trying to make it, here isJapanese Milk Bread recipe that we collected from a Japanese Youtuber, Cook Kafemaru:
250 grams of high protein flour or bread flour
40 grams of sugar
3 grams of salt
3 grams of dry yeast (instant yeast)
185 grams of liquid milk
20 grams of unsalted butter at room temperature.
How to make Japanese milk bread:
  1. Prepare a bowl. Combine all dry ingredients such as flour, sugar, and salt, then mix well with whisk.
  2. Combine warm milk (should not be hot) mix with yeast then mix well. (Yeast is active if you notice foam after a while on the milk.
  3. Pour the milk and yeast mixture into a bowl of dry dough, mix well. Knead the dough for about 10 minutes.
  4. Add butter, then knead again for about 5 minutes until the dough is smooth.
  5. After the dough is smooth, elastic and does not stick, make it into a big circle. Put it back in the bowl, then cover with a napkin or plastic wrap.
  6. Leave the dough at room temperature for about 1 hour to expand.
  7. After the dough expands well, deflate it to let the air out.
  8. Remove the dough, then divide into 16 portions. Make small round shape, put it on a baking sheet and cover again with plastic wrap. Let it stand for 15 minutes.
  9. After that, sprinkle the top of the bread with flour using a sieve. This is to make the bread look pale and has milky tone.
  10. Preheat oven to 180 degrees Celsius for about 10 minutes, then lower it to 150 degrees Celicus. Bake the bread for 17 minutes.
  11. Take the bread out of the pan, let it air dry, and the Japanese milk bread is ready to be enjoyed.
