Soft Crunchy Croissant Recipe

Croissant, crescent-shaped pastry and glass of warm coffee or tea are perfect companions. Either you enjoy with special fillings like sandwich or plain, this pastry with fluffy crunchy texture and milky flavour definitely make people eager to taste immediately. So, here is easy recipe to make your own soft crunchy croissant.
300 grams of high protein flour
50 grams sugar
½ tsp salt
1 tsp instant yeast
150 cold water
50 grams butter
100 grams butter
An egg yolk
1 tbsp plain milk
1. Roll butter for coating into rectangle for 1 cm. Wrap with plastic and put on the fridge until solid and cold.

2. Combine the dough ingredients; flour, yeast, salt and sugar.
3. Pour cold water and knead lightly until the dough comes together.
4. Add butter. Knead above the table for 5 minutes until the dough feels smooth and elastic. Place on the bowl or plate, cover with plastic wrap, and leave until it’s doubled and looks puffy.
5. Roll the dough into rectangle.
6. Put cold butter in the middle of dough, stretch and do letter folds for the dough (laminating process).
7. Roll the dough into rectangle and fold into 3 parts.
8. Repeat the last step for 3 times to create layers.
9. Wrap with plastic and leave for 30 minutes on the fridge.
10. Divide the dough into 2 parts, roll each part into thin layers, right before cutting the shape should be 20 x 55 cm rectangle. Repeat until the last dough.
11. Put baking sheet on your baking pan, put croissant above, leave for another 30 minutes before baked. Do not forget to spread mixture of butter and plain milk above the croissant to give shinny golden skin and preheat the oven.
12. Baked for 20 minutes, 200°C or until golden brown.
13. Remove from the oven and ready to serve.
